Barbecue Pork Ribs with Fancy Hank’s BBQ Sauce

Ingredients:


Method:

  1. First up: remove the membrane from the back of the ribs. Slide a dull knife under the edge of the silver skin, loosen it, then grip with a paper towel and peel off in one piece.
  2. Generously coat both sides of the ribs with Fancy Hank’s BBQ Pepper. Let it sit while you fire up the BBQ.
  3. Set your kettle BBQ or smoker to 110°C, and maintain between 90–120°C. Smoke the ribs for 3 hours, topping up charcoal or wood as needed.
  4. Grab a sheet of foil (about 80cm long). Lay your ribs on top and smother them in Fancy Hank’s Original BBQ Sauce. Wrap tightly to seal in all that saucy goodness.
  5. Return to the BBQ and cook for another 2 hours at the same low temp.
  6. For the final hour, unwrap and brush with another thick coat of BBQ sauce. Keep basting every 20 minutes until the glaze is glossy and the ribs are just pulling away from the bone.

 

 

Pro Tip:

Serve with coleslaw, white bread, and extra sauce on the side. If you’re not licking your fingers at the end, you did it wrong.
