Ingredients:
For the Marinade:
- 1kg chicken tenderloins
- 1 cup buttermilk
- 1½ tsp salt
- ¼ tsp cayenne pepper
- ¼ tsp garlic powder
- ¼ tsp paprika
For the Breading:
- 1 cup plain flour
- 1½ tsp baking powder
- 1 heaped tsp salt
- ¾ tsp black pepper
- ¾ tsp garlic powder
- ¾ tsp paprika
To Cook & Serve:
- 500ml vegetable or seed oil
- Fancy Hank’s Chicken Salt, for seasoning
- Fancy Hank’s Reaper & Pineapple Hot Sauce, for dunking
Method:

Marinate the Chicken
- In a large bowl, whisk together buttermilk, salt, cayenne, garlic powder and paprika.
- Add chicken, toss to coat, cover and refrigerate for at least 2 hours (overnight is even better).

Prep the Breading
- Mix all dry breading ingredients in a separate bowl. Set aside.

Fry It Up
- Heat oil in a deep frypan or skillet over medium heat to 160°C.
- Remove chicken from marinade, let excess drip off, then toss in the flour mix until well coated.
- Fry in small batches for 6–8 minutes, or until golden brown and internal temp hits 75°C.

Finish & Serve
- Drain on paper towel and immediately hit with a heavy sprinkle of Chicken Salt.
- Serve hot with Reaper & Pineapple Hot Sauce on the side (or poured over if you like chaos).
