Ingredients:

  • 1 whole free-range chicken
  • Fancy Hank’s Taco Rub
  • Fancy Hank’s BBQ Pepper Seasoning
  • Fancy Hank’s Original BBQ Sauce
  • Olive oil

Method:

  1. Preheat your oven to 200°C or fire up the BBQ to medium heat.
  2. Place your chicken in a large baking tray or roasting dish. Drizzle with olive oil.
  3. Generously season with Fancy Hank’s Taco Rub and BBQ Pepper, and give it a good massage.
  4. Roast or grill the chicken for 20 minutes to get that skin sizzling.
  5. Remove from heat and baste with Fancy Hank’s Original BBQ Sauce. Return to oven or BBQ for another 30 minutes, brushing on more sauce every 10 minutes.
  6. When the chicken’s cooked through (juices running clear, internal temp around 75°C), take it off and let it rest for 10 minutes.
