RECIPE: HANK’S POTATO SALAD
Serve up the side dish that outshines the main course! Hank’s classic potato salad recipe is the perfect barbecue side dish, great for picnic spreads or paired with roast leftovers.
INGREDIENTS:
Fancy Hank’s Original Mayo
800g Small waxy potatoes (we used red ones), halved
3 Spring onions, finely sliced
1/2 red onion, fineld chopped
1/2 bunch of parsley, finely chopped (leaves only)
White wine vinegar
Salt & Pepper to taste
THE METHOD:
Boil the potatoes in salted water for 20 mins until just cooked, drain, then cool.
Combine spring onions, red onion & parsley in a bowl and top with the boiled potatoes
Add a few big spoons of Fancy Hank’s Original Mayo (approx. 3tbsp but this stuff is tasty so you may want to add more) and toss to thoroughly combine
Add a few dashes of white wine vinegar, plus salt & pepper to taste
