RECIPE: HONEY MUSTARD HAM
Christmas Ham - the A-List celebrity of the Christmas lunch (and for sandwiches through to January).

INGREDIENTS:
1 free-range ham (we used shoulder)
1 pack of cloves
Fancy Hank’s Honey Mustard BBQ sauce
THE METHOD:
Preheat BBQ to 130 degrees.
First up, you will need to remove the rind of the ham. Cut through ham rind from the end, running knife around the whole shank.
Using your thumb, gently start pulling the back the rind. Be careful not to tear the fat as that’s where the flavour is!
Once the rind is removed, gently score the fat in a diamond pattern and place a clove in each diamond corner.
Baste liberally with Honey Mustard BBQ Sauce and place ham in the BBQ with the lid down.
Using a spoon or a basting brush, spoon the glaze over the ham every 20 minutes.
Once the ham has been glazed (around 90 mins to 2 hours), remove it from the BBQ and allow it to rest for 30 minutes.
Remove cloves and slice and enjoy!
